I’m sure we all can agree that breakfast is one of the most important meals of the day. But for me, it often ends up being the most skipped meal!
I would constantly find myself staring into my fridge with 5 minutes to spare, hoping that something would magically materialize that I could eat in the car on my way to work.
Which, of course, it never would.
I’d then have to hope and pray that I could wait until my next break to find a quick snack that would hold me over until lunchtime.
It was a terrible routine I had gotten myself into, and yet, I couldn’t seem to shake it.
While breakfast is something I’m still working on, I thought I’d share some of the recipes that have made it so much easier to have a real breakfast on the go.

I couldn’t find an actual recipe for this, but I used to do it religiously when I was in college. Growing up, I ate Eggo waffles obsessively. When I got older, I switched to healthier brands, but I still love toaster waffles.
Even though I lived only 5 minutes from my college, I never seemed to have enough time in the morning. Enter toaster waffles. However, adult Tekoa decided to take these to the next level. Here’s how to do it!
Toaster Waffles ( I like this brand!)
Fresh Fruit (Bananas, Strawberries, Blueberries, etc)
First, pop two waffles in your toaster until they’re heated to your liking.
Next, grab your nut butter and spread about 1 TB of butter on each waffle.
Finally, top your waffles with whatever fruit you have on hand!
This was a super easy breakfast idea that saved my butt on college mornings where I was eating breakfast in the car.
